D-Maltose monohydrate Usage
- Sweetener; hygroscopic agent. It is mostly used for low-sweetness foods. Although the sweetness is reduced, the concentration is unchanged, so it can inhibit the reproduction of microorganisms and achieve the purpose of long-term storage. The use of its hygroscopicity can prevent the crystallization of candy, and can also improve the structure of the food to keep it soft for a long time. It is also suitable for sweetening natural juices.
- Nutritional sweetener.
- Maltose has aldehyde groups in its molecular structure and has reducing properties. It is a reducing sugar. Therefore, silver mirror reaction with silver ammonia solution can also occur, and it can also react with fresh alkaline copper hydroxide to produce brick red precipitate. It can be hydrolyzed under certain conditions to produce two molecules of glucose. It can be used as a biological medium, a polysulfide determination reagent, and a standard brown color by analytical chemical colorimetric determination.
